Sparkling Wine Services

We offer a broad range of sparkling wine services for a wide variety of clientele:

Grape to Bottle

Our dedicated team is here to guide you through the custom crush grape-to-bottle process, beginning to end. Using your grapes (both large and small lots), we will custom process to your  protocols, helping you to develop an outstanding, competitive sparkling wine, start-t0-finish.

We do all crushing, lab work, and storage in barrels or stainless steel tanks. We then tirage bottle, age, disgorge, cork, foil, cage, label, and pack and paletize your wines for pick-up.

CUSTOMIZED PROTOCOLS

Every client is unique. We understand that your winery may have very specific guidelines and protocols you want followed. We welcome your protocols and work within the parameters you establish.

DISGORGING

Clients choose their disgorging dates — typically spring for a summer release, or fall for a holiday release. However, we can disgorge your wine anytime you like!

WET GLUE OR PRESSURE SENSITIVE LABELS

Our automated bottling line can tackle both wet and pressure senstive labels. Discover more about our Label Specifications.

PERSONALIZED SERVICE

From start-to-finish, you will work directly with a member of our team. Our highly knowledgable winemakers guide client winemakers throught the sparkling process. We are available to you, through every aspect of production. From crush to bottling, dose, inventories, labeling, supplies, work orders, and more.

OPEN DOOR POLICY & CLIENT ACCOMMODATIONS

Clients are encouraged to visit throughout the winemaking process, or watch tirage bottling or disgorging take place. We have on-site accommodations for clients such as a conference room and WiFi, so that clients can conduct business while being present during production, if desired.

Base to Bottle

With our base-to-bottle services, you provide the base wine — we then take that base and develop a sparkling wine using your desired protocols. We then tirage bottle, aging to your liking. From there, you choose a disgorging date, and then we complete the automated bottling and packaging process for you.

Our team is here to work with you through the entire process.

TIRAGE BOTTLING

Our facilities are equipped to tirage bottle and house bins of your sparkling wines until the disgorging process. You can choose the length of stay for tirage.

CUSTOM DOSAGE

We can customize the dosage to your specifications. We also host on-site dosage trials with our winemakers for you to get the exact sweetness profile you seek.

WE WELCOME YOUR SUPPLIES

Do you have customized supplies, such as special corks, wire cages, or foils you prefer to use? We’re happy to accommodate the use of your supplies, if requested.

Are you a winery, retailer or distributor looking for private-label sparkling wines? We offer four distinct varietals: Brut, Rosé, Blanc de Noirs and Blanc de Blancs, which we can custom dosage to suit your desired sweetness profile.

What is Méthode Champenoise?

It is a time-honored French method of making sparkling wine where the bubbly undergoes secondary fermentation in the bottle. This laborious, artisanal method results in the highest caliber of sparkling wines.

We are proud to be one of a select few wineries in the U.S. equipped to produce custom sparkling wines in the traditional Méthode Champenoise, start-to-finish.

Executive Director of Winemaking, Penny Gadd-Coster and head winemaker Manveer Sandhu lead an award-winning in-house team of winemakers and enologists, dedicated to making the finest California sparkling wines available.

How it Works

1. PRESS GRAPES

Grapes are picked early for high acidity and low sugars — typically at 17-20 brix. 

2. FIRST FERMENT

Grape Juice fermentation takes place in stainless steel tanks until wine is dry.

3. WINE AGING

Wine ages on the “lees” for at least six months to years, depending on client protocol. 

4. SECOND FERMENT

Sugar and yeast is added. Wine is then tirage-bottled. Second fermentation occurs in the bottle. 

5. RIDDLING

The process of transferring wine bottles to riddling bins, riddling and resting takes 3-4 weeks. 

6. DISGORGING

Lees are frozen in the neck of the bottle and popped out. Dosage (optional) is added at this time. 

7. CORK & FINISH

Wine bottles are then corked, caged, foiled, labeled and packed.
